The Chef de Cuisine leads and supervises the culinary team in the production, preparation, and presentation of all foods assigned by the Executive Chef to ensure that a consistent quality product is produced. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions. Coordinates menus, purchasing, staffing, and food preparation for the Brown-Forman Hospitality locations and catering with consideration of budgets set forth. Works with their team to improve guest satisfaction while coaching and encouraging education and teamwork. Must ensure sanitation and food standards are achieved.
What You Can Expect:
Assists the Executive Chef to:
- Plan, direct, and supervise food preparation in accordance with state and local food safety guidelines
- Plan and execute menus including foods of all cuisines
- Supervise and coordinate activities of line cooks and support staff ( 3 to 5 workers) engaged in food preparation
- Train and teach staff to support successful multi-functional daily operations
- Exhibit culinary talents by personally performing tasks while leading the staff and managing all food related functions
- Coordinate timing of food production activities
- Create new recipes and food presentations
- Monitor and schedule equipment maintenance
- Plan and execute menus to ensure adherence to budget while maintaining high quality of our products
- Understand all employee positions well enough to perform duties in employees’ absence or determine appropriate replacement to fill gaps
- Utilize interpersonal and communication skills to lead, influence, and encourage others
- Demonstrate honesty and integrity; lead by example
- Review staffing levels to ensure that operational needs are met, including performance goals and team goals
- Establish and maintain open, collaborative relationships with kitchen employees and ensures employees do the same within the team
- Identify the developmental needs of others and coaching, mentoring, or otherwise helping others to improve their knowledge or skills
We Are Looking For People Who:
- High school diploma or GED; 6 years experience in upscale/fine dining kitchen(s), culinary, food and beverage, or related professional area.
- ServSafe certification (or equivalent)
- Financial planning and budgeting with ability to interpret P&L statements
- Familiar with word processing software with a preference for Google’s suite of products
What Makes You Unique:
- 2 year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major.
- 4 years experience in the culinary field, prior hospitality management experience, quality and volume food and beverage experience, on- and off-premise catering experience.
